Since April 2008 Tom Browne of Smallbrook Farm, Newton St Cyres, Devon has been supplying us with our larger ‘bacon’ pigs - finally making the boxes 100% organic. He has established a 100 sow herd of DurocXLandrac gilts which he is crossing with HampshireXDuroc boars which are ideal for our sausages, bacon and ham. pork roasting guide |

Take your joint out of the fridge 30 minutes before cooking to bring to room temperature. Always sit a trimmed leek or onion under your joint of pork; it will caramelise and add both colour and flavour to your gravy - discard after cooking. Oven temperatures differ and so this guide is approximate - (NOTE: always test pork by inserting a skewer into the thickest part of the joint, juices must run clear, not pink).
chined loin* or boneless shoulder joints
Pre heat the oven to 180°C and allow:
35 min / 500g plus 35 min and rest for 10-15 min
*if you want to get crisp crackling then roast the loin for 20 min at 240°C then drop to 180°C for a slightly reduced overall cooking time
boneless leg joint
Pre heat the oven to 180°C and allow:
35 min / 450g plus 35 min and rest for 10 min
