Featured organic pork supplier - Keith Partridge – Duckaller Farm, Dawlish.
Keith and his wife Ros have farmed 90 acre Duckaller Farm for the last twenty years. The farm is owned by Devon County Council. Situated on a band of quick draining sandy soil which surrounds the Exe estuary, it is ideal ground for free range pigs and root vegetables so Keith grows Swedes, potatoes, parsnips, carrots and Jerusalem artichokes for the vegetable boxes and keeps purebred Berkshire pigs to clean up the ground afterwards and restore fertility. They eat the grade out roots and dig up the leftover spuds and artichokes to make sure they don’t become a nuisance the following year. Berkshire pigs provide fantastic pork but poor bacon because as they grow over approximately 65kgs they will get extremely fat. Dave, our head butcher, describes the pork as ‘fluffy’. I’m not sure what he means but it was definitely meant as a compliment. It certainly makes fine crackling. |
