When we first launched the Riverford meatbox it took the form of a fortnightly changing box containing a roast, a selection of meat cuts, and family-friendly items such as sausages and bacon - therby satisfying household culinary needs from Sunday lunch to mid-week suppers and hearty breakfasts. We have held fast to that initial concept in the form of the small, medium and large boxes which continue to change fortnightly for variety and to reflect seasonal changes in cooking style (braising meats for winter later make way for burgers for the barbecue in summer, for example). They vary in size to suit different household requirements. These boxes come complete with the Newsletter and a Riverford 'taster' - a culinary freebie from us to you.
The Meat Box can be supplimented with items from our extensive extras list. You may also, if you wish, order exclusively from this list to make up your own bespoke box (with the sole condition that the order be a minimum of £25).
In direct response to customer demand for a gluten-free box we introduced the nothing but meat box - as a derivative of the medium meatbox it contains only meat cuts and no processed items. The nothing but meat box (gluten-free) is also available together with an optional breakfast pack (this is not gluten-free). |

Home curing ...
Firstly, curing salts. We put them in the box once before and had some fairly complimentary feedback and, as it is a pork box this time, we thought we would try again. The idea of soaking a joint of pork in brine seems so alien in these days of limited salt intake that it does need a little explanation cookingforengineers and wikipedia do it much better than me). The idea is that the joint will stay moist when cooked and, for once, it isn’t bad science. In essence, salt gets in via osmosis, changes the proteins to form a water retentive molecular structure...

We listen to our customer feedback and in response to it we introduced firstly the Riverford boxes for the freezer (chicken box, pork box, beef box and lamb box) and then the steak box, and beef fillet. These boxes are for those who wish to bulk buy their favourite organic fresh meat for home freezing - the steak box and - even more so - the beef fillet being at the luxury end of the meat box spectrum. These are the contents of the current fortnight's boxes. When ordering, please bear in mind that the contents of your box do not depend on the date of your order but on the date of delivery. Occasionally we have to make adjustments but publicise them as soon as we can. The item weights quoted are average weights.

Please note that in the event of an unforseen shortage of items we reserve the right to make a suitable substitution - in the event of this happening we hope that this does not cause disappointment. Occasionally we run out of things, when this happens we reserve the right to substitute items, quantities of other contents may be adjusted accordingly. We reserve the right to include one item which has been dispatched frozen. This will always have at least five days shelf life (from dispatch/ packing) or three days in the case of a minced product such as sausages or meatballs. |
