Ingredients - serves 4
6 pork sausages
1 large onion, peeled, halved and sliced
2 clove garlic, crushed & finely chopped
1 tbsp fennel seeds, crushed
pinch of dried chilli flakes
3 tbsp olive oil
salt, pepper
300g cherry tomatoes
handful torn basil leaves
Method
1 Warm the olive oil in a pan and add the sliced onion, crushed fennel seed, chilli and garlic - allow to gently stew until softened and translucent (about 7-10 minutes) then add the cherry tomatoes and continue until they are almost collapsing (again, keep the heat low so that all is stewing rather than frying). Check seasoning and add salt and pepper if necessary.
2 Taking a small sharp knife, slit the skins of the sausages and remove, break up the meat and dry fry over medium heat in a small frying pan. Once browning a little and cooked, add to the tomatoes and onion.
3 Cook pasta and toss with the sausage sauce and torn basil before serving in warmed pasta bowls.
