Home curing ...

Firstly, curing salts. We put them in the box once before and had some fairly complimentary feedback and, as it is a pork box this time, we thought we would try again. The idea of soaking a joint of pork in brine seems so alien in these days of limited salt intake that it does need a little explanation cookingforengineers and wikipedia do it much better than me). The idea is that the joint will stay moist when cooked and, for once, it isn’t bad science. In essence, salt gets in via osmosis, changes the proteins to form a water retentive molecular structure...

The Riverford meatbox: Available in three different sizes, small, medium and large, with meat portion weights to suit different household requirements. Our small box meat portions will feed two; our medium is tailored to suit a family with young children; and our large for a household with teenagers. Box contents change fortnightly to offer variety and we include a free taster in every box - a culinary gesture from us to you. We also include an informative newsletter which includes full-blown recipes and a meal planner so you'll have plenty of ideas of what to do with the contents.

Boxes for the freezer: All meat delivered fresh and ready for home freezing. For bulk buying, we offer the all organic beef, lamb, pork, chicken and steak boxes - fresh meat of your favourite variety - ideally suited for home freezing and competitively priced.

Meatbox extras: An extensive list of items that can supplement your regular meat box order - or if you wish, you can order exclusively from the list to create your own bespoke box - for as little as £25. We have recently added a whole host of new items and a wider selection of prime organic roasting joints.
